It's a hard knock life for us at The Step. After much exhaustive research and painstaking taste testing we have finally settled on England Preserves as our jam supplier.
We discovered them at Borough Market and every jam we tried was absolutely delicious, but we can't serve them all... so tell us which jam YOU would like to see at The Step!

I am very firmly of the view that toast is simply a medium for conveying marmalade to the mouth and not an end in itself. My taste though is eclectic. Jam should have no more than 50% sugar. There should be real evidence of fruit - lumps of rhubarb, raspberry pips, big bits of orange peel (different jams not necessarily all in the same one!). I have found that its not always the most expensive jams that give the most satisfaction - our local stores stock cheap imported varieties which can be pretty good. I completely agree with your views on toast although I have always referred to it as a "vehicle" rather than a medium. Food for thought there. I can confirm that the sugar content of England Preserves jam is 40% organic sugar and then the fruit. As you can see from the picture, we've enjoyed this variety (Ruby's Redcurrant, Rhubarb and Vanilla) and there are pips galore but the lack of rhubarb lumps in the photo might just be because we gobbled them all up.
Will most certainly be trying out the M&S Ginger and malt Whiskey conserve on my next visit.
