Hot Milk Supper Club focus on underused and undervalued food. We want to raise awareness of an issue within the food industry and within people’s homes. Our second supper club on July 13 will add to this with items that we notice people have in their store cupboard that were bought and used once for a particular recipe.

Using the following undervalued ingredients; retired egg laying hens, lambs breast, pullet eggs, undersized potatoes, vegetables from the felix project in Enfield, seasonal wonky vegetables and using up store cupboard ingredients such as kombu, soy sauce, porcini mushrooms, rice paper we’ll be putting together an east Asia inspired tapas.
The menu will include:

Miso Soup

okonomiyaki pancakes
Japanese pancake using undervalued vegetables and fish, pullet egg mayonnaise, house hoi sin sauce

Lamb breast dim sum
making use of unwanted lamb breast

vietnamese summer rolls 
rice noodles, shredded veg, local herbs, broken nut dipping sauce

house pickles
watermelon rind, felix veg, cucumber

crispy hen korokke
japanese style croquette using retired hens

burmese raw salad
Double fried beans, cabbage, peanuts, pickled ginger, shallots, baby gem leaf

green tea pannacotta
made with saved green tea leaves from our tea
